François Cazin built a quiet cult following, and his wines reached the U.S. after importer Joe Dressner tasted them at a Loire wine fair and pursued them. He was also instrumental in rescuing the near-extinct Romorantin grape and winning neighboring Cour-Cheverny its own appellation in 1997. He farms organically, works old vines, ferments on native yeasts, and bottles unfiltered by gravity, his wines are low intervention decades before it was en vogue. Cheverny’s soils are a mosaic of clay, limestone, and silex (flint), and each does different work in the glass. The limestone and flint are free draining and calcium rich: they stress the vine gently, keep soil pH high, and are strongly associated with wines that read as high acid, taut, and chalky to flinty. The clay does the opposite, it holds water and stores warmth, feeding the vine steadily and filling out the mid palate so the wine never finishes thin. The flint in particular is tied to that struck match, gunflinty note common across the Loire. Because these soils sit in a cool, marginal climate, the fruit never over ripens; sugars stay moderate and acids stay high.
