From .6 hectares of 25 year old vines planted to chalky-clay soils, the grapes are hand harvested in early September, destemmed and allowed to macerate for five days. Spontaneous fermentation takes place for 3 weeks in stainless steel and old oak casks (650L) with temperature control. The wine spends six months aging in the same casks. Unfined and unfiltered.
