Liten Buffel Mother Makes Glucose Sparkling
Liten Buffel focus on low intervention wines that reflect a sense of place and time. They are minimalists in the cellar, and in the vineyard. Their wines are dry, unfined, unfiltered, and with no sulfites added. Just foot crushed grapes, settled in old wood, and bottled by hand at the proper time.
The first fruit and grape hybrid wine we’ve seen from this winery. Starting with a field blend of grapes from the Bookwood vineyard in Niagara county. This is mixed with the juice of pears that’s fermented to full dryness before an addition of honey from Bookwood Homestead for a secondary ferment in bottle to finish as a dry sparkling red country wine.
