Manuel Formigo Ribiero White


This wild field blend is from densely planted 35+ year old vines in the Miñoteira, Portela, Os Pousos, Pereiro, As Barcas, Barbaña vineyards. Treated organically, they are planted on "sábrego", a type of soft granite, mixed with stones and gravel. Sabrego soils are very highly acidic, very poor in organic material and drain well. The grapes are hand-harvested, followed by a gentle pressing of the grapes with a pneumatic press, with inclusion of small percentage of selected ripe stems. Fermentation takes place over 14 days at cool temperatures in stainless steel tank. No malolactic fermentation, then lightly fined and filtered. The result is rich yet crisp, a lovely introduction to Manuel's amazing work in the vineyard.
