Vinemind Clare Valley Riesling 2021

VineMind is a small winery in the Clare Valley & Adelaide Hills just north of the City of Adelaide in South Australia. It’s a bit of a rustic winery, in their terms the most elaborate piece of equipment is the coffee machine. They farm using organic principles. This Riesling comes from 15 year old vines, the fruit is hand harvested and fermented using selected yeast, it’s aged for 5 months in concrete. This Riesling is clean and approachable with notes of lemon, tart apple, with bright minerality and acidity. It would be great paired with some spicy ramen noodles.
