L'Eau Epicee is as unique as it is delicious. A blend of Riesling 70% and Gewürztraminer 30%, the juice was fermented two ways before assembling the final wine. The Riesling and a portion of the Gewürztraminer were pressed and fermented together in stainless steel. The remaining Gewürztraminer was destemmed and fermented on the skins in open top fermenters until dry before pressing to neutral oak. This is a light and playful aromatic sparkler made in a rustic style is akin to Col Fondo Prosecco, where a small amount of sediment remains in the bottle. This wine is fruit-forward with tons of pear, grapefruit and green apple skin over a solid mineral backbone.
