Cesari was founded in 1936 by Gerardo Cesari who set out to produce an Amarone capable of competing with the great red wines of the world. His son Franco joined him in the 1960s, and the winery continues to evolve while staying true to its regional roots. Franco’s children, Gerardo and Deborah, have joined their father in upholding the pillars of traditional winemaking while introducing innovative technology at their two state-of-the-art cellars. Their estate holdings include more than 100 hectares of hillside vineyards located in premier sites in the Valpolicella appellation, including 3 single vineyards, primarily in the historic Classico area.  This is a blend of Corvina Veronese, Corvinone, and Rondinella sourced from various vineyards throughout the Valpolicella Classica region, following the traditional Amarone drying and ageing process. Selected grapes are left to dry until December inside small crates in spacious, well-ventilated drying rooms ('Fruttaio'). Here, grapes lose 30% of their weight and increase their sugar  concentration, a crucial step for the subsequent fermentation. The total ageing period lasts 3 years, with 12 months spent in oak barrels and 6-8 months in the bottle. In appearance, it shows an intense ruby-red color with garnet hues. On the nose, it boasts typical aromas of ripe fruit, cherry, and jam emerge. On the palate, it is elegant, warm, and full-bodied, with a long and surprising finish.
