The Scammacca del Murgo family has farmed the eastern slopes of Etna for generations, near Santa Venerina, where the vines sit on black volcanic sand. Carricante gives this white its spine, all bright citrus and a cool line of acidity, while Catarratto rounds things out with a little orchard-fruit flesh. Look for white flowers, chamomile, green apple and lemon, and that unmistakable crushed-stone minerality that comes from growing grapes on a living volcano. Everything is fermented and aged in stainless steel, so nothing gets in the way of the fruit or the mountain. It stays fresh and faintly saline right through the finish.
