Fourth generation grower and winemaker David Léclapart farms three hectares in the Premier Cru village of Trépail within the Motagne de Reims, northeast of Ambonnay and Bouzy. He defines his four principles that form the cornerstones of his work as a winemaker as Purity, Energy, Pleasure, Ecology. In accordance with these, he chose to apply a biodynamic approach to his work in his vineyards. He believes this philosophy’s basis in the utmost respect for the four creative forces (water, earth, wind, and fire) is in perfect accordance with his four principles. He completely abandoned the use of fertilizers, herbicides, and chemical pesticides. Similarly, his practices in the cellar and oak treatments are in line with the same philosophy that is intent on transmitting the inherent qualities of the wines.
